Since hubby's birthday was last week, I decided I was going to make him whatever he wanted for dinner for it. All he wanted was our usual favorite meal - meatloaf and mac & cheese. All right, I resigned myself that I wasn't going to get to make something new, but even if he just wanted meatloaf, I could still make the rest of the meal myself. So, following a trip to the grocery store, I set to making the nicest, most complicated dinner I've made yet.
I made my meatloaf as normal, and found out that after watching Worst Cooks In America, I can actually cut an onion halfway decently. I found a simple recipe for Mac & cheese on the Grouprecipes site and decided that that dish would be the first one I alter to make my own version (starting #23). The changes I made weren't big - the recipe called for elbow macaroni and mozzarella cheese; I picked up shells and a four-cheese mix. It ended up being decent, but it was too tame. I think next time, I'm going to get a sharper chedder, and maybe try adding some cayenne or wochestershire sauce for a bit more flavor. I also want to mix in the breadcrumbs with instead of adding them on top. For dessert, instead of brownies, I made the peach cobbler we made for Grandma and Grandpa. I added some cinnamon to the top, and it worked out really well. I need to make a shaker of cinnamon sugar, and I'll use that next time. I'm definitely replacing the brownies with it in the favorite meal. I didn't make a salad, and that's probably for the best. There was no room! I feel full just thinking about it. I don't think my diet approved of last night...
So with last night's meal, that puts me at almost halfway through #21 with 11 new recipes tried, started #23, and pushed me closer to achieving #25. Once I get the mac & cheese down, I'll just need to make a salad and tasty dressing for the side and I'll have perfected our favorite meal.
